Pad Thai is delicious, but horrendous, if you’re trying to keep your blood sugar levels balanced. I lived in Thailand for a year and although I loved the smell of it, I rarely ate it because it would always send my blood sugar levels through the roof.
Now that I’m back in my own kitchen, I’ve made a few adjustments to the ingredients to make it possible for those of us with diabetes to enjoy it.
As a person with type 1 diabetes and an advocate for lower-carb eating, I love inspiring people to try veggie noodles. They are the perfect way to keep meals light, flavorful and full of nutrients.
Not only is this dish delicious, it is also a lot of fun to make. Have you ever used a spiralizer to turn a zucchini into noodles?! For you parents out there, this might just be the magical trick to get your kids to enjoy eating their vegetables.
Serves 2–3 people
Ingredients:
- 3–4 zucchinis
- 1 white onion, chopped
- Spoonful of coconut oil
- 2–3 celery stalks, chopped
- 2 carrots, chopped
- 1 cup of cabbage, chopped
- 1 cup of broccoli, chopped
- 2 eggs
Instructions:
The noodles:
- Using your Spiralizer, spiralize the 3–4 zucchinis into noodles
- In a large pot, cook zucchini noodles with a small amount (¼” or so) of water until desired texture (soft but not entirely, or else will be too mushy) — usually about 5 minutes.
- Set aside until stir-fried veggies are done.
Stir fry the veggies:
- In a large pan, sauté onions in coconut oil until translucent
- Add all chopped vegetables and cook a few minutes, until desired consistency is reached. (You can also try other veggies too, such as red and green peppers, yellow squash…)
- Add eggs and then cook for just a few minutes.
- Serve on top of zucchini noodles with below garnishes.
Garnish Toppings:
- Liquid Aminos
- Fish Sauce
- Chopped green onions
- Chopped peanuts
- Chili pepper flakes
- Fresh cilantro
- Freshly squeezed lime juice
